Freshly Baked Buns on Easter Morning


I decided to bake warm delicious buns for my family yesterday, and I used Emily Solomon's recipe, and tweaked it a little to be a little more neutral to taste, I have made them by the original recipe, with raisins and cardamom and they are mouthwatering, with butter, tea and nothing else! The recipe makes between 16-20 buns:

  • 25 g Yeast
  • 5 dl Milk
  • 30 g Sugar
  • 2 eggs
  • 15 g Salt
  • 900 g Flour
  • 75 g Butter
  • Sunflower seeds as topping
  • 1 egg for brushing
Heat the milk till it's lukewarm in a small pot, you can also heat it in the microwave, but keep a close eye on it so it doesn't get too warm.
Put a little milk in a big mixing bowl and stir out the yeast in the milk. 
Add the rest of the milk + the sugar and salt, give it a little stir and then add the flour and eggs. Stir/knead until well combined.
Add in the butter little by little until all the butter is well incorporated. Leave the dough to rise,  in the bowl covered with a kitchen towel, for around 2 hours. Put it someplace warm.
When the dough has risen, knead it through and divide it into 16-20 buns. 
Put them on a baking sheet, lined with parchment paper, for my standard size oven I need 2.
Cover them again and let them rise for another 2 hours.
10 mins before the buns are done rising set your oven to preheat to 200 degrees Celsius. 
Whisk the egg together and give the buns a generous coating. 
Sprinkle on some sunflower seeds or any other seed of your liking and put them in the oven and bake them for about 10-20 mins depending on your oven (until they are nice and golden brown on top) You can bake both sheets at the same time, just remember to switch the places for the bottom ones to get color too.

I love the toasted sunflower seeds on top, I have a habit of collecting the ones that have fallen off the buns and sprinkle them back on the cut and buttered side, yum!

Raw 42 | More food!

Last weekend I enjoyed a very relaxing and fun day with a girlfriend, we especially enjoyed some very delicious food at Raw 42 in Copenhagen. they have the most delicious vegan and gluten-free salads, pizzas and desserts along with all kinds of healthy and yummy beverages.
And it's right in the middle of Copenhagen.


After we had eaten our delicious lunch at 42 raw, we went out to shop some special items for my wedding (which I will make a post on later), And you guys know how hard (lol) it can be to shop so we needed a little pick me up after all that hard work. And we love 42 raw so much that we went there again to a little sweet treat and coffee.


The atmosphere is so relaxed and cozy that it makes the perfect place for some girl talk !
Just a little recommendation :)

Tea Love

Goodmorning!! :)
So I have a straight out addiction to tea, I love tea and there's nothing a cup of tea can't help fix in my opinion! For as long as I remember we have been drinking tea everyday in my family, my dad would and still does drink a cup of tea every morning with his breakfast. I have most definitely inherited that habit, my mornings are not complete if I don't have a cup of tea (just like some of you coffee drinkers out there!). 

I think it would be somewhat scary to show you the selection of tea's there is at my parents house (because there is a lot, 2 shelves in one of the kitchen cabinets are devoted just to tea!) so I thought I would just show my three favorites at the moment, all organic, natural herb tea's, totally in the spirit of the hippie/organic person that I am :D


First one from the left is "Peppermint & Licorice", I especially like this one because the licorice really shines through and sweetens the tea while the peppermint makes it fresh (besides being a tea addict, I'm an "all things sweet" addict too, which means lot's of sugar in my teas but it's really nice not having to put sugar in this one).

The second one is "revitalise", this to me tastes like Christmas, cinnamon, cardamom and ginger... Christmas all year round. There's licorice in this one too and it sweetens the tea slightly.

Last but not least is "night time" and this tea is really amazing for evening time, it contains Valerian root, among other ingredients, but what's special about Valerian root is that in higher doses it's used in herbal medicine to help treat insomnia. I drink this mostly at night, it's light

As you can see they are all from the same brand, Pukka, and its totally a coincidence. It could have something to do with that where I live that's the easiest brand to find which is organic, and it's a great brand!

If anyone was doubting my Tea Love then they definitely don't anymore haha.. (who can write a post this long about tea?)

Sushi In The Sky

I just want to share some pictures from the amazing time I had with the girls last wednesday evening Since it's the last time we're gonna be at school (EVER! :D) we had planned for at long time to go and eat at a nice restaurant in Copenhagen.
It was a long day of waiting, first lectures until 4 pm and then we had to wait even more because they didn't have a table sooner than 8.45 pm when we booked (obviosly a busy place!)
So when the waiting game was over (we tried to kill time at department stores and cafés), we were all excited to get the "party" started!
And where do girls start? In the bathroom taking pictures LOL!
We had virgin cocktails, yummy!

We orderd all kinds of things, Spicy Edamame Beans, Ebi Bites, Spicy Mayo, Crayfish In Ricepaper, Yummi Rolls, Ebi Panka Rolls & Chickens In Line

4 mini sampels of different desserts, let me just say you need to try the Matcha Icecream, it's a little piece of heaven.

Jasmine Silver Pearls tea - All you tea lovers out there should try this! It's amazing!

Amazing view from the balcony, with the warmer weather coming it would be great to sit out here!

Sticks|N| Sushi is definitly a recomendable place, high service, amazing location, cozy atmosphere and super sweet waiters.

P.S. when I paid the bill, I almost fainted - We definitly didnt hold back, not to say that the place it super expensive, you definitly get what you pay for.

Can you guys recommend any good restaurants? :)

Outfit | School Escape

Last day at school! My energy levels have not been this low, ever. I feel like someone sucked all the energy out of me and I'm a 100% sure that the weekend is gonna be a wonderful cure for that!
Until we reach 14.00, I wanna dream myself back to Tuesdays dinner night earlier this week with the girls.
It's funny because i choose the same sandwich every time we're here :)

The blouse and the skirt is new, the classical shape really draws me and I love the simplicity of this look. 
I feel like this outfit is very versatile. 


It was freezing outside, and there was actually still laying snow a couple of places so 
I was really happy to have my jacket back on! :)

Baking Cake!



So I was baking a cake yesterday and I decided to share the recipe with you guys!
Here goes:
2 Eggs
300 g Sugar
75 g Margarine
1 tsp. Soda
1 tsp. Baking soda
1 tsp. Vanilla sugar
2 dl Milk
300 g Flour

The thing is after I started mixing the ingredients I figured out I don’t really follow the recipe.
I do butter instead of margarine because I never have margarine? I don’t do regular soda at all – I always feel like I can taste it.. Yucky!. Then I use yogurt instead of milk – I never have milk in the house because I don’t drink it (more on that later).
So I guess the real recipe looks like this:

2 Eggs
300 g Sugar
75 g Butter
1 tsp. Baking soda
1 tsp. Vanilla sugar
2 dl Yogurt
300 g Flour
You can make it as a chocolate cake too, just add 1 dl of Cocoa powder.

Start with setting the oven at 180°C (356° F) and then mix the eggs and sugar, then you add the butter (easier if room temperature or melted) and mix, then add the baking soda, vanilla sugar and yogurt and mix well, lastly add the flour little by little and stir well.
Butter the cake forms well before putting the batter in so they will slip easily. And then just keep an eye on them. When you put a toothpick in the cake there shouldn't stick anything to it.  

This batch is enough to bake both the cakes on the pictures so it will be a good size cake!
