Rhubarb Cake | Recipe


Why is it that most social things are based around food and mostly unhealthy food? Like cake and candy? When we want to have a good time we go out and buy all of these unhealthy things (not that there is anything wrong with that once in a while, I love me some cake we all know THAT!)
But honestly I appreciate social time more when I am doing/eating healthy things.

Anyway some time ago one of my besties came to visit for the first time after I moved to Malmö and since we are both good at being bad when it comes to eating healthy, I decided that we were gonna have fun and eat a lot of delicious healthy things, forgot about healthy and baked a rhubarb cake, perfect for summer,  I'm so bad haahahah! If you would like to try, here's the recipe.

You will need:

- 2 dl sugar
- 3 eggs
- 100 g meltet butter
- 1 tsp baking powder
- 1 tsp vanillasugar (you can substitute it with vanilla extract)
- zest of 1 lemon (or 2 limes)
- 4 dl flour
- 1 dl yogurt
-  1 ½ dl milk
- 4 rhubarb stalks cut in 1 cm pieces

Heat the oven to 200 degrees celsius (390 degrees fahrenheit)

Whip egg and sugar together until fluffy, add  meltet butter, milk and yogurt and mix.
Mix flour, vanillasugar and lemon zest. Add it slowly untill it's all well combined. Lastly fold in the rhubarb pieces.
Prepare a springform pan by giving it a genereous coat of butter and pour the batter in, and put on the middle rack for 20-25 minutes. Every oven is different so keep an eye on it.

Enjoy with fresh berries and sourcream, so delicious!

Accutane Part 2

Hi guys! I promised you an update on how its going with Accutane, you can see the post about me starting on Accutane here. And it's going surprisingly well.

Results & experienced side effects
After 3 months I can really see results in my skin, it's smooth, I haven't had a pimple in 8 weeks now and basically the only thing that indicates that I had acne is a little scarring. I actually had problems with acne on my scalp and on my earlobes and those are totally gone too. But, now I can officially say that I'm experiencing side effects, dry eyes, dry nose, dry skin, dry lips and  muscle pain which started 2 weeks ago. But still to be honest It's not that bad, I don't really notice the dryness in my eyes besides when I wake up, I have to blink a couple of times to see clearly and the dryness in my nose has only been a problem when I'm sick which I've been a lot because of all mucous membranes gets dry and they are a big part of your immune system, especially in your nose and throat.

Dry skin is kind of a problem because I'm having more eczema breakouts than I've ever had, especially on my face and hands. And it's hard to keep down even with hormone creams. I try to moisturize the worst places as many times a day as possible, and the rest of my body at least once a day. Which seems to work somewhat. My lips have also been a little hard to keep moisturized, and the weather is also working against me (but eos saves me again and again, read more about that here!) The last time I was at the dermatologist she said I could stop mid March, and I so look forward to that!
And I'm just hoping for lasting effects.

My next update will probably be after I have stopped the treatment, so you guys can see how my skin looks, and if the results last (cross your fingers guys).

Accutane - My new "friend"

As you guys know, I'm all for the natural way, I don't like using medicine when nature can take care of it, itself. I truly believe that you can cure so many things by changing you lifestyle, by taking care of yourself and making wise choices. But, I've been struggling with acne for the past 5 years, and I just can't seem to figure out what's causing it/triggering it or making it go away, even though it did get better when I stopped drinking milk, you can read about that here. It just didn't go away completely, I decided to go to a dermatologist. I had tired antibiotics and cremes before, but they would not make the acne go away permanently, so she suggested that I try accutane. I have to say I was against it in the beginning, because whatever is teratogenic (disturbs growth/development of embryo/fetus) can not be healthy for your body in any way. I did decide to go with her suggestion because having cystic acne is really painful, both physically but also psychological. No matter how many times I tell myself that I don't care how I look, it still bothers me, and since I will get married this summer, I would like to have beautiful pictures, without uneven and scarred skin.

In Denmark Accutane can only be prescribed by a dermatologist, before starting the treatment though you have to get blood samples taken, to see if you are pregnant (if you are female of course!) and to see how your liver is working and fat levels in the blood. They do that every month to make sure there are no unwanted/dangerous side effects, and they make sure you are not pregnant because Accutane is teratogenic, which means it will harm the embryo/fetus. They say it takes 4-6 week before you see improvements, and the acne can even get worse in the beginning! Of course you experience the side effects almost imediatly, the most prominent side effect is dryness (which is actually how the drug works), dry skin, dry scalp, nose bleeds because of dryness in the nose and dry eyes. (anyone questioning why i was reluctant to start this treatment in the first place? Hmm?) Besides that treatments need to last for at least 4-6 months to see lasting results and some even have to repeat treatments to make their acne go away(Crossing my fingers that, that someone isn't me!).

I have been on Accutane for 4 weeks now and I'm starting to see improvement. But I also have side effects, my skin is more dry, its nothing that a little cream can't handle though. But the eczema on my scalp has gone crazy, I have to use medication to keep it down, which I normally don't have to. Other than that I have had crazy dry lips, I cannot live without a lip balm (you can see what lip balm I use here), like if I leave the house without one I have to go back and get it (lip balm addiction LOL). Other than that I haven't had any side effects. Let see what next weeks blood samples will say and if my dermatologist will let me continue the treatment.


I will definitely keep you guys updated, you will not be spared one single little detail, especially because I want this to be a help for others to make decisions related to treating acne.

Food!


There is no doubt that I am a food person, if you ever looked at my Instagram then you know that I have more food posts there than anything else! I love food, in any form, shape, color, taste and any way cooked (sure there is things I don't like, but I always make sure to try them again), I'm always open to try something new. My health is crucial for me, I really try to do everything to keep myself healthy. Healthy food is definitely part of my diet, salads, smoothies and juices I eat/drink everyday.

But what is healthy food really?
The thing is we are so different and we all have individual needs.
But there is some general rules we all should follow, to get the nutrition we need. To prevent a very long list of diseases, because our diet has probably the biggest effect on us. And it makes sense, since food is one of the few things we put inside our body, it's the building blocks that helps renew cells. So if you don't put the right things in your body, you end up not having the right/enough building blocks for your cells.

For any person, the diet needs to contain of carbohydrates, proteins, fibers, vitamins, minerals, fats,water for normal function. But seriously who can monitor everything they put in their mouth? And who want's to spend lots of time looking at the ingredient lists on products in the supermarkets?
I for sure don't! My basic rule is go after everything that is Green and Clean! For me that means, trying to buy products that is the least processed, everything in the fruits & greens aisle and at the butchers.  
As long as you have that, and basic ingredients as flour, butter, milk, oil, salt, pepper, spices, sugar etc.
If you have those, you have all the opportunities to make anything, tasty and delicious :)
For instance, instead of buying your tomato souse try making it yourself, then you can add flavors and make it exactly how you like it and you will have no doubt about what's in it.

The days I'm home and I have the time, pampering myself with good healthy food is one of the best things. I'll make myself a lovely rice dish, with carrots and onion, roast some lovely chicken breast and a good healthy salad, with lettuce, cherry tomatoes, parsley, cilantro, a little bit of olive oil. 

I really do try to eat a healthy diet, but since I'm on a mission to gain a couple of KGs I rarely say no to a piece of cake, chocolate or candy :)

Obsession | Pai Skincare


Right now I'm dreaming myself away to a time, where i have the money, the luxury to be able to buy the products from the Pai skincare line.
I have for a long time been looking for skincare products that are completely clean, made out of only natural ingredients. Not because I necessarily have sensitive skin but because I really think and care about what I put on my skin, and in general what my skin and body is exposed to.
Pai is an organic(Certified Organic), all natural, alcohol, paraben and fragrance (+more) free company. They strive to be fit for basically all skin-types and especially sensitive and hyper-sensitive skin.
So for me this is the perfect kind of skincare, natural and truly good for your skin.
I sure am gonna wish for some of these products for my birthday! - But for now I have to live with only the Pai Muslin Face Cloth...
So if anyone wanna buy me presents then my wishlist is what is here ;)

Workout Routine

I live in a different world than most when it comes to working out and eating healthy, because I want to gain weight not lose it! And that’s why I mostly do muscle building exercises. I do a lot of different ones so here is part of my list…
  • Squats 100
  • Pushups – As many as I can do in 1 min
  • Plank 1 ½ min + Side Plank 2 x 1 min
  • Wall-Sit 2 min
  • Crunches 2 x 25
I started this routine with a extended squat challenge, but I never finished because I could see the muscles forming on my thighs and it was too much for me (Who wants man legs???), I do this 4-6 days a week depending on my schedule and my mood, and it actually works! I gained 2 Kg. Yaaayy :D So I hope for further progress, I’ll update you later on that.
Now I’m gonna do my workout, before eating dinner!  Talk to you guys later
